Chinese Chicken Salad

Sure the holidays are over, but that doesn’t mean that we stop eating and drinking all together! I wanted to share this fabulous (and healthy!) recipe with – one Off Your Plate used for countless parties catered during the holiday season. This dish is good year-round…doable anytime…and pleasing ALL the time! This tried-and-true recipe, passed down a few generations in my family, is that of the classic Chinese Chicken Salad.

Trust me, people can’t stop eating it. Here goes…

What you need:

  • 2 TBS shaved almonds
  • 1/2 cup sesame seeds
  • 1 head chopped cabbage (I usually use the whole head)
  • 4 chopped green onions
  • 1 package Top Ramen (chicken flavor)
  • 4 cooked chicken breasts

Lightly toast the first two ingredients in the oven – just about 5 minutes or so
Mix all ingredients together.
Crumble Ramen noodles into the salad.

To make dressing:

  • 2TBS sugar
  • 1/2 cup sesame oil
  • 3 TBS vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • The tiny packet of Ramen chicken flavor

**Wisk all of this together until the sugar is dissolved and it tastes perfect!
