Mac n’ Cheese for Adults

Big Girl Mac n’ Cheese
(Serves 6 – 30 minutes)

12 oz. ziti pasta
4 oz. thick-cut bacon – cut into tiny pieces
2 tbsp. flour
2 cups milk
4 oz. gruyere cheese, shredded
4 oz. Italian fontina cheese, shredded
2 oz. Parmesean cheese, shreddd
1tbsp. chopped chives

1. Cook pasta.
2. Fry bacon in a saucepan on medium heat until brown & crisp.  Dry out on paper towels.
3. Pour off all but 1 tbsp. fat from the pa.  Add flour and whisk over medium heat. Pour in milk 1/4 cup at a time, whisk well after each pour. Add cheeses in 3 batches, continually whisking. Make sure all is melted.
4. Drain pasta and then stir into cheese sauces.  Divide into bowls and top with bacon and chives.
