Vegan Fruit French Toast – My Secret Recipe
I know, I know… vegan french toast just sounds boring. I guarantee you this recipe is far from boring. Maybe you’re out of eggs or just need a break or you’re dating someone that doesn’t eat eggs, this recipe is simple and delicious.
What you will need: 2-3 Servings
– Bread of your choice
– 1 apple
– 1-2 Bananas
– 4 large strawberries (Frozen is good too)
– Almond milk . Sory or Rice works as well.
– Butter or Vegan butter
Grab your blender, toss in the fruit and add a dash of almond milk and puree the heck out of the fruit. You should end up with a light batter consistency – pour that into a bowl and add some cinnamon. Yep.. it’s that easy – you’re basically done. Take your bread and plop it into the batter and let soak for as long as you like. I like to get a really nice coating and let the bread soak up all that yummy fruit.
Get your griddle, frying pan or cast iron skillet, preheat the pan and slap a generous amount of butter in it. Melt the butter down and throw your soaked bread in the pan. Let the bottom side down of the bread really get crispy and then flip over. You may get some grilled up excess fruit bits, these are HEAVEN.
Once you have a nice crisp on both sides – top with fruit or butter and syrup, any old thing will do. Don’t hesitate to replace the fruit with something you like better, it’s ok, let go and enjoy.
